Thai Turkey Meatballs W/Zoodles

Cooking for a family can sometimes be an overwhelming task. Trying to find something that everyone likes or that fits everyone’s diet preferences can take a lot of time and effort but this is an easy dish for the whole family, no matter what your nutrition goals are. The ‘base’ of our meal is the turkey meatballs, these are whole30 friendly, low carb, gluten/dairy-free and can fit any diet (besides vegetarian/vegan). When I make these, I usually cook different sides, one pot of noodles (for Ryan) and one saute pan of zucchini noodles (for me). When Madelyn eats these I just break them into small little bite sizes that she can eat and everyone is happy.

 1 lb ground turkey
 ¼ cup cilantro, chopped
 ¼ of a large red onion, chopped
 1 cup almond flour
 1 whole large egg
 1 tbsp fish sauce
 1.50 tbsp red curry paste
 13 pinches of salt/pepper
Sauce
 1 can of full fat coconut milk
 2 tbsp red curry paste
 2 tbsp sunbutter or peanut butter
 1 tbsp sesame oil
 1 tbsp coconut sugar

1. Preheat the oven to 375 degrees. In a large mixing bowl mix all of the ingredients for the meatballs and mix until well combined. (Tip: I love using kitchen gloves to easily mix with my hands).
2. Once the meat ingredients are well combined, use a melon ball scooper (or your hands) to easily scoop out meatballs and place onto a greased baking pan.
3. Place the meatballs in the oven and bake until the meatballs are fully cooked about 18-25 minutes.

For the sauce:

1. In a saucepan over medium heat, add in all of the ingredients for the sauce and cook for 5- 7 minutes until the sauce is smooth and well combined. (If you prefer more spice add in extra red curry paste).
2. Once the sauce is done, remove the pan from heat.

3. Lastly, when the meatballs are finished cooking, remove from the oven. Place on top of your favorite carbs or vegetable and top with the curry sauce. Enjoy!
