Greek Quinoa Salad

Fresh, crisp, cool and satisfying is exactly what this salad is all about. There are so many reasons why you need to try this salad but the most important one is how delicious it is. Sometimes the typical salad can get boring but this is far from that. Add your favorite protein on the side for a perfect meal!

***makes 10 servings, 1/2 cup =1 serving***

Serving for 1/2 cup: 121.2 calories, 4.2 grams fat, 17.7 grams carbohydrates, 2.3 grams fiber, 4.9 grams protein

Ingredients for the salad:

  • 1 cup quinoa
  • 2 cups water
  • 2 cucumbers, chopped
  • 3 small tomatoes, diced
  • 1/2 red onion, chopped
  • 2 cups Kale, shredded
  • 1/2 cup Greek olives, chopped
  • 2 oz feta

Dressing:

  • 1 tbsp olive oil
  • 2 tbsp Balsamic Vinaigrette
  • Dash salt and pepper

Instructions:

1. For the quinoa:
-Boil 1 cup quinoa in about 2 cups water in a medium pot 
-Once it boils, reduce heat, cover and simmer for about 15-20 minutes or until all the water has been absorbed 
-Uncover and remove from heat 
2. Add the quinoa, feta and all the chopped vegetables to a mixing bowl, combine well 
3. Add dressing and mix well
