Cucumber & Almond Cream Dill Smoked Salmon

Thanksgiving is just around the corner! Wait… did I really just write that?! Where has this year gone?! If you are like me and a little bit behind this year have no fear I’ve got some healthy dishes you can add to your thanksgiving menu so you don’t have to raid pineterst last minute! This whole week I will be sharing some of my favorite healthy treats that will leave all of your guests asking for the recipes and truth be told there is little time required for each menu item! The best part about this appetizer is the prep time is about 5 minutes, you don’t have to cook anything and it is dairy free! How great is that?!?! Now let’s get to cookin’! 

Cucumber & Almond Cream Dill Smoked Salmon

  1. 1 sliced cucumber, 1/3 inch slices
  2. 1/2 cup almond cream cheese
  3. 1/4 cup fresh dill, chopped
  4. 1 teaspoon lemon juice
  5. Salt/pepper to taste
  6. 1- 8oz packet of wild caught smoked salmon
  1. In a mixing bowl add in the almond cream cheese, dill, lemon juice, and salt/pepper, mix until well combine. Slice up the cucumber into small slices and top the cucumbers with a small scoop of the almond cream, top a small piece of smoked salmon and serve!

IMG_5232 I know I mention her a lot on my website but my friend Sandra loves all things food, fashion and healthy so it is hard to not be inspired and share ideas with her! She is the one who told me about this almond ‘cream cheese’ and I am hooked on it! The photo above is the plain favorite which is great for recipes and adding to it but I also bought the ‘chive’ flavor just to eat on cucumbers and other sliced vegetables as a snack! I found this one at Whole Foods. IMG_5246 Fresh dill smells soooo amazing! I used about 1/3 cup to 1/2 cup of cream cheese because I really wanted that dill flavor but you can always add more or less based on your taste preference! It is always best to start with less and add as you go!  IMG_5249 My awesome mother-in-law bought me this serving platter for my birthday (along with a few other matching pieces) from Chez Glass in Chester, Canada and it really is a show stopper! Anytime someone sees these dishes I always get a million questions so here is the website for the local artist and how to purchase them…. they even ship to the US!! There is something in this store for everyone no matter what your taste is! IMG_5266 Ok, ok back to the recipe….. Smoked salmon is one of my favorite things to eat in the entire world! I know thats big statement but it is true! I always buy wild caught and eat it as soon as possible! IMG_5253 Honestly, this is one of my favorite dishes in this series of posts and I really hope you give it a try!
